Cauliflower Steaks with Mash

This recipe is a simplified version of Ottolenghi's recipe for the "Cauliflower steaks with zahter" (link below). I've simplified it, because I didn't have all of the ingredients and served it as a side (I had only a small cauliflower at home).
I honestly didn't expect much from it, but it's really delicious and flavourful. I will definitely make it a regular thing at our home.

Recipe is for 2 servings as a side, if you want it to make it your main just go for a bigger cauliflower and double the rest of the recipe.
Ingredients :
1 small cauliflower (around 350-400 g without the leaves)
35 g unsalted butter
2 springs of thyme
4 small pieces of lemon skin
1 big potato (300 g)
2 tsp of light tahini
1 tbsp lemon juice
water
salt
fresh coriander (optional)
Preheat the oven to 190'C and prepare a tray lined with parchment paper.
Method :
1. Wash the cauliflower and take off the leaves. Hold it upright and cut two chunky slices from the middle part. Leave the "steaks" on the side.
2. Chop the trimmings into big chunks. Wash and peel the potato, cut it in small pieces. Boil a small pot of water and add two big pinches of salt to it. Once water starts boiling, add the cauliflower trimmings and potato. Cook it until both vegetables are very soft (about 10-15 minutes). When they are ready, drain them and leave on the side for a moment.
3. Heat up a pan over medium-low heat. Add the butter, thyme, pinch of salt and lemon zest to it. When the butter starts to foam place your cauliflower steaks in it. Fry over low heat for 5 minutes. Place them on the tray and put in the oven for 8 minutes.
4. When the cauliflower is baking you can go back to making your mash, place cooked potato and cauliflower in a food processor (or bowl/jug if you are using hand blender or a potato masher). Add tahini, lemon juice, 1 tbsp of water and pinch of salt. Blend it all together until it's smooth.
5. When the steaks are ready you can place couple tablespoons of mash first, then the steak and finish it off with some fresh coriander.
