Courgette Fritters / Pancakes

Courgette fritters are my favourite spring and summer dinner! They are quick to make and you can add some seasonal fresh herbs to make them taste even better. I used dried herbs in this recipe, because I just didn't have much fresh herbs at home, but feel free to use fresh ones. I most often eat them with a simple salad on the side and grated cheese on top.

Recipe is for 4 servings.
Ingredients :
2 courgettes
3 eggs
100 g flour
1 tsp fine sea salt
1 tsp ground black pepper
1/2 tsp basil
1/2 tsp parsley
1/2 tsp thyme
Method :
1. Wash and grate courgettes and place them in a bowl.
2. Add eggs, flour, salt, pepper and herbs to the grated courgettes. Mix everything with a spoon.
3. Fry on a pan with some vegetable oil over medium-low heat. I usually make each fritter from 2 tbsp of the batter. Frying should take about 3 minutes for each side.
