Leek Omelette

Omelette is a perfect dish for a lunch or summer dinner. It's very simple to make and you really need only eggs and some kind of fat to make it. Of course it can take years to make a perfectly beautiful omelette, but if you don't mind putting too much filling inside by accident and tearing it slightly while folding, it could become your favourite food. This omelette is made with things that I had leftover from groceries last week, so it was last moment to use it up. It was a delicous choice and I very much enjoyed my lunch.
I highly recommend making your dinner with some random bits from your fridge or pantry from time to time, just to use them up and maybe you will discover a lovely flavour combination that you haven't thought of before.

Recipe is for 1 (big) omelette.
Ingredients :
3 eggs
2 tbsp milk
pinch of salt
1/2 tsp ground black pepper
1 tbsp of fresh chives
5 cm piece of leek
olive oil
handful of grated cheese of your choise (I've used mozarella)
1 tbsp of butter
Method :
1. Crack the eggs into a bowl. Add milk, salt, pepper and chopped chives. Whisk with a fork until eggs are perfectly combined with the rest of ingredients.
2. Wash and cut the leek. Heat up a non-stick pan with some olive oil and start frying the leek over medium-low heat. You can seperate each slice into individual rings. Sprinkle it with some salt. When they catch some colour, remove them from the pan.
3. Now you can either wash your pan, if you don't want your omelette to get any browning on it or go ahead and place your butter in the pan and place it over low heat.
4. Pour your egg mix into the pan. When it starts to cook from the bottom, but it's still runny on the top, you can move it with a spatula from the edge to the middle and allow the lquid to cover the empty spot on the pan.
5. When most of the egg is set, it's time to add your filling. Place the leek and cheese in the middle. Then it's folding time - you can either just fold it in half using a spatula or try more tricky way and fold it from both sides and then flip it up side down to place the "seam" underneath your omelette.
6. After folding let it cook for another minute and then plate it. I've added some tomatoes and more cheese on the top.
