Orange Salad

I know it may seem weird, but putting orange in your salad is the best choice you can possibly make. That's it.


It's sweet, sour and refreshing. I thought it would be perfect to share this simple recipe with you, since we started to have really beautiful and sunny days. I am really hoping you will give it a try, especially if you never had fruit in your salad before.


It's a recipe for a side salad, but if you want to make it your dinner, then go ahead and add some grilled chicken or falafel to make it more filling.



Recipe is for 4-6 servings.


Ingredients :


SALAD

1 medium-sized iceberg lettuce (or romaine lettuce)

1/2 of a cucumber

2 oranges

handful of sunflower or pumpkin seeds (toasted)


DRESSING

2 tbsp olive oil

1 tsp rice vinegar (or white vine vinegar)

juice from 1/2 of lemon

2 tsp honey

1 tsp Dijon mustard

1/2 tsp fine sea salt

1 tsp ground black pepper


Method :


1. Wash the lettuce and cut it into medium-sized pieces or tear it by hand. Place it in a big bowl.

2. Wash cucumber and cut it into dice. Wash and peel the oranges, cut each in half and then slice it. Add the cucumber and oranges to the lettuce.

3. If your seeds are not toasted you can place them on a pan over medium-low heat, until they start browning. Remember to move them with a spatula constantly to avoid burning them. When they are ready, allow them to cool down to room temperature before adding to your salad.

4. It's time for the dressing, place olive oil, vinegar, lemon juice, honey, mustard, salt and pepper in a cup or a bowl and whisk it until it's smooth consistency.

5. Pour the dressing on your salad and give it a good mix to cover everything with it.
