Roast vegetables are my favourite option for an effortless dinner. Sweet potato became one of my favourite vegetables over the years, so this recipe is very close to my heart. :')
It's an easy recipe for sweet potato fries baked in the oven. Sweet potatoes have quite a lot of moisture in them and cornflour is helping with that slightly, but unfortunately they won't get as crispy as from an airfryer. I think they are as delicious as they can get when baked in the oven, but if you know any tricks how to make them even more crispy, please let me know in the comments!

Recipe is for 4 servings.
Ingredients :
1 kg of sweet potatoes
2 tsp cornstarch
5 tbsp rapeseed oil
1 tsp paprika
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp dried coriander leaf
1/2 tsp salt
1 tsp ground black pepper
Preheat the oven to 190'C (fan). Prepare 30x40 tray lined with parchment paper.
Method :
1. Wash, peel and cut potatoes into sticks. Place them in a bowl and dust them with cornstarch. You can simply place the potatoes in a bowl, add the cornstarch, cover the bowl with a plate and shake it until they are all covered.
2. Prepare the marinate, mix the oil, paprika, smoked paprika, cayenne, coriander, salt and pepper. Pour it all over the fries and give them a shake again.
3. Place the fries on the tray and put them in the oven for 20-30 minutes. Halfway the baking time, turn them around and move them or flip with a spatula. This way they will be more crispy and evenly browned. For last 5 minutes you can turn on the grill setting in your oven to crisp them up even more.
Enjoy!
