Tomato Sauce - from scratch!

If you didn't manage to get your tinned tomatoes or passata - don't worry I've got you covered!
Here is a simple recipe for a tomato sauce from scratch. You can mix it with your beans, with pasta or any other dish or your choice.

Ingredients:
1 kg fresh tomatoes
5 garlic cloves
1 white onion
2 tbsp of olive oil
fresh rosemary and thyme (you can use dried herbs instead)
1 tbsp sugar
1 tsp of paprika
1 tsp of smoked paprika
salt
black pepper
Preheat your oven to 200'C (fan)
1. Wash all tomatoes and cut them in half. Place them on a tray lined with parchment paper (mine was about 30x35 cm), put them cut side down.
2. Peel your onion and cut in half, place next to tomatoes. Take garlic cloves and place them on the tray (with the skin on!).
3. Drizzle everything with olive oil and sprinkle with couple pinches of salt and pepper. Place your fresh herbs (few stems) on top of the tomatoes.
4. Put in the oven for 20 minutes, then put your oven on grill setting for 2 minutes.
5. Take the tomatoes out of the oven and peel the skins off using wooden tongs or let them cool down slightly and do it by hand.
6. Place tomatoes and onion in food processor or a bowl. Peel off garlic skin and place peeled garlic with tomatoes. Put the herbs on the side, pick some of the leaves and put the in the mix.
7. Blend everything in food processor or using hand blender until it's smooth (I left some small bits of veg in mine to have some texture).
8. Pour it in a medium sized pot and keep over low heat.
9. Add sugar, paprika and smoked paprika. Season with salt and pepper to taste.
10. Bring it to boil and then simmer for about 10-15 min. After that time flavours should come together perfectly and it should thicken slightly. I highly recommend putting a lid on to stop it from making a mess in your kitchen (leave the pot slightly open).
