Banana bread?

Why there is question mark at the end, you may ask... because it's not banana bread, it's actually a banana & apple bread (or cake) with chocolate chunks, pecans and cranberries!


Recipe is for 1 lb (450 g) loaf tin - comes out tall

or

7" (18 cm) round tin - comes out low, but more "cake looking".



Ingredients :


2 ripe bananas

1 red apple

2 eggs

120 g sugar

250 g plain flour

1 tsp of soda bicarbonate

pinch of sine sea salt

50 g melted butter (or vegetable oil)

75 g of nuts/fruit/chocolate


Recipe :


Preheat your oven to 170'C (fan) and line your tin with parchment paper (you can stick it to your tin using a bit of butter or oil).

TIP: If you don't have parchment paper you can butter/oil your tin well and dust it with layer of flour.


If you are using butter - now it's time to melt it, so it has time to cool down before you make cake batter. If you are using vegetable oil - start from step 1.


1. Put bananas in a bowl and turn them into chunky pulp using potato masher or a fork. Peel and chop apple into small dice and add to banana mix.

2. To the same bowl add egg, sugar, flour, soda and salt. Mix it well using a spoon or spatula

3. Add butter or oil to your cake batter. Mix it well using spoon or spatula.

4. Now it's time to add your nuts, chocolate and fruit. I used about 25 g of each: chopped milk chocolate, chopped pecans and cranberries. Mix everything together.

5. Put your cake batter in the lined tin and bake for 30-45 min (check it every 5 min or so after first 30 min of baking). Bake until it has nice golden colour on top and is cooked inside.


TIP: Check if inside of your cake is cooked using wooden toothpick or wooden bbq skewer. Spike the cake in the middle - if there is runny batter on the skewer after you took it out, it's not ready yet, if the skewer is dry and has only few cake crumbs on it - it should be ready to take out of the oven.


6. Take out your cake out of the oven when it's ready. Rest it in a tin on a cooling rack or wooden chopping board for at least 30-45 minutes before slicing.
