Banana Pancakes

One of my favourite songs is "Banana Pancakes" by Jack Johnson, I have a lot of good memories related to it and it's a song that just makes you feel better!
I wanted to share this recipe, because it's a great way to use ripe bananas and it does't need any extra sugar, so it's a great breakfast option.

Recipe is for one big or two small portions (5-6 small pancakes)
Ingredients :
1 ripe banana
2 eggs
60 g porridge oats
tiny pinch of salt
youghurt and fruit (or any toppings of your choice)
Method :
1. Peel the banana and slice it. Put it in a bowl or a jug.
2. Add eggs to the jug. Blend everything together until smooth.
3. Add porridge oats and salt. Stir it with a spoon.
4. Leave it on the side for about 5 minutes, so oats can absorb some moisture from the mix.
5. Heat a non-stick pan over medium heat and make your pancakes. I make them without any oil on my pan, but if your pan is not the best or things just tend to stick to it use a little bit of vegetable oil.
6. Place pancakes on a plate and add your toppings. I've used yoghurt, kiwi and homemade rhubarb & lemon compote.
